Healthy Tangy Sriracha Burger Bowls

Try these Healthy Tangy Sriracha Burger Bowls! They will be your new favorite burger, but in bowl form! I’ve filled this bowl with grass fed ground beef, and tender oven roasted potatoes. Then, I added a variety of fresh veggies, drizzled it in my homemade sriracha aioli sauce, and topped it with some dill pickle chips for an extra crunch! This bowl is another great one for meal prep, or perfect for a satisfying summertime dinner on the patio. Try them, you won’t regret it!

“Must Knows” for Burger Bowl Success

Preparing Ground Beef-

When I cook my ground beef, I allow it to cook about 75% of the way through, and then drain the liquid. After draining the liquid, is when I like to add my onions, garlic and spices. This leaves the onions and garlic some time to cook all the way through while the rest of the meat cooks. Adding them in a little bit later also allows them to keep a lot of their flavor while letting them soak up the spices as well!

Oven Roasted Dill Potatoes-

There are many way you can roast a potato! For this recipe, I decided to use baby potatoes, and cut them into halves. Regular potatoes will work just fine here, just make sure to cut them into cubes, no larger than one inch. When your potatoes are cut, add them to a steamer, and steam them until almost tender. About 10-15 minutes of high temp steam. When they begin to soften, but are not quite tender, remove them from steamer, and add them to a large mixing bowl. Add the rest of the “potato” ingredients, and pour onto a parchment lined sheet pan. I use parchment so that my potatoes don’t burn to the sheet pan, since they will be broiling at such a high temperature. It also makes for way easier clean up! 🙂

Homemade Sriracha Aioli Sauce-

This delicious aioli sauce is one of my favorite sauces i’ve made so far! I definitely recommend using a blender or a food processor for this aioli sauce. This will help eliminate many of the lumps created by the cottage cheese, and will leave you with a smooth, and creamy sauce!

How to Make Burger Bowls for Meal Prep-

As with many of my “bowl” recipes, I always like to add in a section about meal prep. Meals like these are perfect to prepare on a weekend, so you can have healthy lunches ready to go for the next week! If you are preparing these Healthy Tangy Sriracha Burger Bowls with the intent to meal prep, make the ground beef, and potatoes just like you would if you were serving right away. Then grab some meal prep containers, and divide your prepared meat, and potatoes as needed for each meal. You can prep all of your veggies of choice, and add them to the top of your bowl. I would leave out any vegetables that might make your bowl soggy by the time you eat it. For example, avocado and tomatoes have a tendency to brown, or make the lettuce soggy. Prepare your aioli sauce, but wait to add it until right before you are ready to eat your meal!

Ingredients
  

Burger Ingredients

  • 2 lbs Ground Beef
  • 6-8 cloves Garlic minced
  • 1 large White Onion chopped into small pieces
  • 1 can Black Beans Rinsed well, and drained
  • 2 tsp Paprika
  • 1 tbsp Ranch Seasoning
  • 1 1/2 tsp Cumin
  • 1 tsp Garlic Powder
  • 3-4 tsp Sea Salt
  • 1-2 tsp Black Pepper

Roasted Baby Potatoes

  • 5-6 cups Baby Potatoes chopped into halves
  • 2 tbsp Butter Melted
  • 1/4 cup Bread Crumbs
  • 3 tsp Seasoning Salt
  • 1 tbsp Everything Bagel Seasoning
  • 1 tsp Dill

Homemade Sriracha Aioli

  • 1/2 cup Cottage Cheese heaping
  • 3 tbsp Mayonaise
  • 1 Lemon juiced
  • 3 cloves Garlic
  • 1/2 tbsp Sriracha
  • 1 tbsp Ranch Seasoning
  • 2 tsp Onion Salt
  • 1/2 tsp Paprika
  • 1 tsp Roasted Garlic and Red Pepper Seasoning

Topping Options

  • Green Leaf Lettuce washed and chopped into bit size pieces
  • Yellow Bell Pepper chopped into small pieces
  • Cherry Tomatoes halved
  • Avocado Sliced thinly, or chopped into chunks
  • Green Onions chopped
  • Shallots chopped or sliced thinly
  • Mozzarella Cheese Grated, *cheddar works too
  • Dill Pickle Chips crushed into small pieces

Instructions
 

Homemade Sriracha Aioli

  • Combine all ingredients into a blender or food processor.
  • Blend until smooth and creamy.

Topping Prep

  • Chop/ slice/ prepare all desired toppings.

Ground Beef Prep

  • Place a skillet over medium/ low heat. As pan begins to warm, add ground beef.
  • Cook the meat until about 75% cooked through. It will be pink still. (View blog post above under "ground beef" section for more details)
  • Drain liquid, and continue cooking. Add garlic, onions, and seasonings.
  • Cook until meat is all the way browned. Then add your black beans, and stir to incorporate them throughout the burger. After 2-3 minutes, remove from heat to avoid drying out your burger.

Dill Roasted Baby Potatoes

  • Pre-heat your oven to it's Broil Setting.
  • Chop all baby potatoes in half.
  • Place them in a steamer. Steam for 10-15 minutes on high heat, until they begin to soften, but are not quite tender all the way through. *See Notes
  • Once potatoes have begun to soften, remove them from steamer, and add them to a large mixing bowl.

  • Add melted butter. Stir to coat, and then add bread crumbs. Stir until coated.
  • Then add the seasoning salt, everything bagel seasoning, and dill.
  • Pour prepared potatoes onto a lined(parchment paper) baking sheet. Place them in the oven.
  • Broil for 12-14 minutes. TOSSING EVERY TWO MINUTES. *See notes!
  • Once the outsides have turned a little more crispy, they are done! Remove them from the oven:)

Assembling your Healthy Tangy Sriracha Burger Bowl

  • Place potatoes, and burger on the bottom of your bowl.
  • If you prefer your cheese melted, I would add that next. This way the heat from your meat, and potatoes will melt it for you!
  • Then add your vegetables of choice.
  • Top with crushed dill pickle chips, and homemade sriracha aioli.
  • Mix it all up for even flavor in every bite!
  • Dig in, and enjoy!

Notes

Note 1. You can boil potatoes in a pot of water if you don’t have a steamer on hand. Following the same instructions, cook them until almost tender, but not quite done. 
Note 2. I cannot stress this enough…when your oven is on broil do not leave! Stay attentive to the food inside. I have had food go from perfectly golden brown, to black in a matter of seconds. Stay attentive when tossing your potatoes for those 12-14 minutes, so that you can get a nice crisp outside, but not burnt!
