Balsamic Cherries and Roasted Feta Toast

Have you ever wondered what you can eat with your sourdough toast? Picture this. In front of you is a fresh baked loaf of sourdough bread. You have eaten the classic warm bread with butter(seriously the best, I know). You have tried the popular avocado toast, with everything bagel seasoning(another winner!). Now you are looking to mix things up a bit. This is where this balsamic cherries, and roasted feta toast comes in! Perfectly caramelized cherries and onions, over a creamy roasted herb feta spread, atop of toasted sourdough bread. The flavor combinations create such a unique experience as you devour each bite!

Creating your Sourdough Toast Masterpiece

Tips for Roasted Feta Dip:

To roast your feta cheese, place in a small, oven safe dish along with garlic, and a few sprigs of rosemary and thyme(if you are unsure what a sprig is, I’ll get to that later in this post!). Drizzle your avocado oil over top, to coat the ingredients in the dish. Then, add salt and pepper. Roast in the oven for 40 minutes, on 425ºF. Here is the crucial part…you want this dip to be prepared WHILE ITS WARM! As soon as you have removed it from the oven, begin to work quickly removing the roasted feta contents from the dish, and placing them in a mixing bowl. Add your laughing cow cheese, spices, and heavy cream. Using a hand mixer, whip until smooth. Cover with a lid, or plastic wrap, until ready to serve.

Preparing Caramelized Balsamic Cherry mixture:

While your feta is roasting in the oven, begin preparing your balsamic cherry mixture. You will need to pit all of your cherries, and cut them in half. Slice your onion thinly, and then, cut each slice in half again(this keeps the onion pieces small enough to fit nicely on your sourdough toast. Add your butter(or coconut oil) to a medium sauce pan, and place over medium to low heat. Next, add onions, and allow them to begin to soften as you toss them occasionally in the pan. As they become clear, and soft, add you cherries into the pan. Slightly raise the temperature to medium-high heat, and allow your cherries to cook with the onions for two minutes. Toss/stir consistently. After two minutes, return temperature to medium-low heat. Add your balsamic vinegar, heavy cream, herbs, and salt and pepper.

What is a Sprig?

You will hear me use this term a few times throughout this recipe. If you are new to using fresh herbs, the term “sprig” might mean NOTHING to you!:) To put it simply, a sprig is a piece of your herb, 3 inches or less at the terminal end of the stem. I will link an article here that talks about herbs, and the term “sprig” in more detail, for those who are interested. I’ve also added a picture below for reference, of the amounts I used when I was making my Balsamic Cherries, and Roasted Feta Toast. This leaf herb stripper is a really handy tool, when it comes to removing the leaves from the stems. Its not necessary, but makes the task a heck of a lot simpler!

Serving Balsamic Cherries and Roasted Feta Toast:

After you have prepared you cherry mixture, and your roasted feta dip, begin assembling you sourdough toast. Toast your slice of sourdough bread, and add a thin layer of butter to one side. Next, spread your roasted feta dip(while its warm). Layer your caramelized balsamic cherries, and onions on top of feta spread. Top with fresh thyme and rosemary leaves, everything bagel seasoning, and salt+pepper. Enjoy!

Ingredients
  

Roasted Feta Dip

  • 7 oz(203g) Fresh Feta
  • 6-8 cloves Garlic
  • 2 tbsp Avocado Oil
  • 2 sprigs Rosemary remove leaves from stem
  • 1 sprigs Thyme remove leaves from stem
  • salt+pepper
  • 5 packages Laughing Cow Cheese
  • 2 tbsp Heavy Cream
  • 1/2 tsp Dill dried
  • 1/2 tsp Onion Salt

Carmalized Balsamic Cherries

  • 1 pound(453g) Whole Red Cherries
  • 2 tbsp Butter(or coconut oil) heaping
  • 1 White Onion Slices thinly
  • 3 sprigs Rosemary remove leaves from stem
  • 4 sprigs Thyme remove leaves from stem
  • 2 tbsp Balsamic Vinegar
  • 1 tbsp Heavy Cream
  • Extra Sprigs of Rosemary and Thyme
  • Everything Bagel Seasoning

Instructions
 

Roasted Feta Dip

  • To roast your feta cheese, place in a small oven safe dish, along with garlic and a few sprigs of rosemary, and thyme.
  • Drizzle your avocado oil over top, to coat the ingredients in the dish. Then, add salt and pepper.
  • Roast in the oven for 40 minutes, on 425ºF.
  • As soon as feta mixture is done roasting, remove it from the oven. Begin to work quickly removing the roasted feta contents from the dish, and place them in a mixing bowl.
  • Add your laughing cow cheese, spices, and heavy cream. Using a hand mixer, whip until smooth. 
  • Once your roasted feta dip is complete, cover with a lid or plastic wrap until you are ready to eat. **see note**

  • While your feta is roasting in the oven, begin preparing your balsamic cherry mixture.
  • Prepare cherries by pitting them, and cutting them in half.
  • To cut onions, slice the onion in two. Then slice each half in half again(hamburger style or horizontally),and slice each of those pieces thinly.
  • Then pull herbs from the hard stem, so that you are left with the leaves only. Set aside.
  • Add your butter(or coconut oil) to a medium sauce pan, and place over medium-low heat.
  • Next, add onions, and allow them to begin to soften as you toss them occasionally in the pan.
  • As they become clear, and soft, add you cherries into the pan. Slightly raise the temperature to medium-high heat, and allow your cherries to cook with the onions for two minutes. Toss/stir consistently. After two minutes, return temperature to medium-low heat.
  • Stiring, or whisking mixture continuously, add balsamic vinegar. Then, slowly add heavy cream, and stir to coat.
  • Lastly, add herbs and salt and pepper. Stir to spread the rosemary, and thyme throughout. Cook for two minutes, and then remove from heat.

Preparing Balsamic Cherries and Roasted Feta Toast

  • Toast a slice of sourdough bread. You can do so in a toaster, or on a skillet to warm/brown your slice.
  • **optional** but recommended…add a thin layer of butter to your warm slice of bread.
  • Next, spread your roasted feta dip over your sourdough toast.
  • Then, add your carmazlied cherry, onion, and herb mixture.
  • Top with Everything Bagel Seasoning, fresh thyme and/or rosemary sprigs, and salt and pepper.
  • Enjoy!

Notes

  1. The roasted feta dip can be reheated in the microwave. It will harden if you refreigerrate (which is fine!), so if you have leftovers that you want to eat later, just pop it in the microwave for 1-2 minutes to soften it.
