Roasted Feta Dip
- To roast your feta cheese, place in a small oven safe dish, along with garlic and a few sprigs of rosemary, and thyme.
- Drizzle your avocado oil over top, to coat the ingredients in the dish. Then, add salt and pepper.
- Roast in the oven for 40 minutes, on 425ºF.
- As soon as feta mixture is done roasting, remove it from the oven. Begin to work quickly removing the roasted feta contents from the dish, and place them in a mixing bowl.
- Add your laughing cow cheese, spices, and heavy cream. Using a hand mixer, whip until smooth.
- Once your roasted feta dip is complete, cover with a lid or plastic wrap until you are ready to eat. **see note**
Preparing Caramelized Balsamic Cherry Mixture
- While your feta is roasting in the oven, begin preparing your balsamic cherry mixture.
- Prepare cherries by pitting them, and cutting them in half.
- To cut onions, slice the onion in two. Then slice each half in half again(hamburger style or horizontally),and slice each of those pieces thinly.
- Then pull herbs from the hard stem, so that you are left with the leaves only. Set aside.
- Add your butter(or coconut oil) to a medium sauce pan, and place over medium-low heat.
- Next, add onions, and allow them to begin to soften as you toss them occasionally in the pan.
- As they become clear, and soft, add you cherries into the pan. Slightly raise the temperature to medium-high heat, and allow your cherries to cook with the onions for two minutes. Toss/stir consistently. After two minutes, return temperature to medium-low heat.
- Stiring, or whisking mixture continuously, add balsamic vinegar. Then, slowly add heavy cream, and stir to coat.
- Lastly, add herbs and salt and pepper. Stir to spread the rosemary, and thyme throughout. Cook for two minutes, and then remove from heat.
Preparing Balsamic Cherries and Roasted Feta Toast
- Toast a slice of sourdough bread. You can do so in a toaster, or on a skillet to warm/brown your slice.
- **optional** but recommended...add a thin layer of butter to your warm slice of bread.
- Next, spread your roasted feta dip over your sourdough toast.
- Then, add your carmazlied cherry, onion, and herb mixture.
- Top with Everything Bagel Seasoning, fresh thyme and/or rosemary sprigs, and salt and pepper.
- Enjoy!
Notes
- The roasted feta dip can be reheated in the microwave. It will harden if you refreigerrate (which is fine!), so if you have leftovers that you want to eat later, just pop it in the microwave for 1-2 minutes to soften it.
