Whether you are vegan, gluten free, dairy free, vegetarian or eat all foods, this meal can work for you! Use the freshest ingredients and spices. This meal will leave you feeling nourished, and satisfied!
Preparing Chicken Fajita Power Bowl:
When you are ready to serve your power bowls, begin by putting your prepared rice into the bottom of your bowl. I add a little bit of butter, salt, and pepper to my rice first. Next, add fajita chicken, and sautéed veggie mixture. Then add your toppings. To enjoy this meal to its fullest potential, look at it piled high with delicious toppings, and then mix it all up for full flavor in every bite!
Ways to adapt power bowl:
- Vegan: If you prefer a vegan option, you will leave out your chicken, and dairy products. There is always the option to use a vegan substitute meat, and vegan cheese, or plain vegan yogurt instead of greek yogurt. As a recommendation, use fresh prepared beans, and add them to your skillet after the vegetables have been sautéed with spices.
- Vegetarian: You can follow the same recommendation found in the vegan section, and use the black beans in place of chicken as a larger serving. Opposed to a “topping” added to your meal, use beans as more of a main part of the meal.
- Dairy free: Your dairy free option is fairly simple, and strait forward. Prepare bowl as directed, just serve without cheddar cheese, and greek yogurt as some of your optional toppings!
- Keto: If you prefer the keto diet, you will leave out your rice, and possibly your beans. The power bowl will adapt into a beautiful fajita salad, full of veggies and good fats!
Meal Prep Option:
These chicken fajita power bowls make a perfect meal prep option! Prepare in separate containers, dividing rice, and fajita chicken mixture up evenly. Add toppings as desired. Wait to add fresh avocado, lettuce and any other fresh veggies to your bowl until the day you plan to eat it. This will help avoid wilting, and keep the meal fresh as the week goes on. Chicken Fajita Power Bowls
Equipment
- large skillet or cast iron pan
- sharp knife
- cutting board
- pot for cooking rice
Ingredients
- 2 tablespoons avocado oil or extra virgin olive oil
- 4 chicken breasts sliced into inch thick strips
Sautéing Vegetables
- 1 purple onion sliced thinly
- 1 white onion sliced thinly
- 6 garlic cloves minced
- 5 large mushrooms sliced thinly
- 1 yellow bell pepper sliced thinly
- 1 red bell pepper sliced thinly
Seasonings and Spices
- 1 tablespoons ranch seasoning
- 1 tablespoons garlic salt *see notes
- 2 teaspoons onion salt *see notes
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1 tablespoon taco seasoning
- 2 cups uncooked brown or white rice
Topping Options for Fajita Bowls
- romain lettuce or spinach
- black beans fresh or from a can(rinsed)
- avocado sliced or chunked
- cherry tomatos halved
- cheddar cheese grated
- cilantro rinsed, and roughly chopped
- greek yogurt
- limes sliced, for juicing
Instructions
- To begin, prep all fajita veggies, and slice chicken. Choose toppings from list above (I used all of them), and prepare them as needed. *For example: rinse beans, slice limes, and wash/chop lettuce.
- Start cooking your rice. Follow instructions on rice package.
- Place a skillet, or cast iron pan over medium heat, and add avocado oil to pan.
- Once pan is warmed, add chicken. Cook chicken for about five minutes. Then add all of your sautéing veggies.
- Stir vegetables occasionally as they cook.
- As vegetables begin to soften, add all of your spices, and seasonings to pan, and stir to coat.
- Cut open a piece of chicken to check that its completely cooked through. (If it is all white inside it is done.)
- Once vegetables have reached your desired tenderness, and chicken is done, remove pan from heat.
