Delicious Cottage Cheese Pancakes
Take your usual boring pancake batter and turn it into a protein packed, nutritious breakfast with these yummy cottage cheese pancakes!
Equipment
- blender
- pan, skillet, or grill
Ingredients
- 2 whole eggs
- 1 cup cottage cheese
- 1 cup oatmeal
- 2 tsp baking powder
- 2 tbsp melted butter or coconut oil
- 1 1/2 tsp ground cinnamon
- 1/4-1/2 tsp ground nutmeg
- 1-2 tsp maple extract any extract will work as a substitute here
- pinch salt
Instructions
- Combine all ingredients in a blender (except the melted butter) and blend until smooth.
- Once you have a smooth batter, add the melted butter, and blend again until well combined.
- Cook pancakes over medium to low heat.
- Top with plain greek yogurt, berries, and maple syrup.
- Enjoy!
