Delicious Cottage Cheese Pancakes

Take your usual boring pancake batter and turn it into a protein packed, nutritious breakfast with these yummy cottage cheese pancakes!

Ingredients
  

  • 2 whole eggs
  • 1 cup cottage cheese
  • 1 cup oatmeal
  • 2 tsp baking powder
  • 2 tbsp melted butter or coconut oil
  • 1 1/2 tsp ground cinnamon
  • 1/4-1/2 tsp ground nutmeg
  • 1-2 tsp maple extract any extract will work as a substitute here
  • pinch salt

Equipment

  • blender
  • pan, skillet, or grill

Method
 

  1. Combine all ingredients in a blender (except the melted butter) and blend until smooth.
  2. Once you have a smooth batter, add the melted butter, and blend again until well combined.
  3. Cook pancakes over medium to low heat.
  4. Top with plain greek yogurt, berries, and maple syrup.
  5. Enjoy!
