I am all about the “one pan meals” some nights, as a busy momma! This bbq sweet potato and burger skillet is perfect for an evening you want to skip(most of) the dishes. I have a love hate relationship with bbq sauce to be honest. Recently, I’ve begun to open my mind to the flavor, and discovered some yummy meals to make with it! This meal is packed full of fresh ingredients and is super easy to make! Give it a try!

BBQ Sweet Potato and Elk Burger Skillet
Busy nights call for easy one pan meals! Very little prep required! Enjoy this hardy dish with fresh ingredients and lots of flavor!
Ingredients
- 5-6 sweet potatoes medium
- 2 tbsp coconut oil extra virgin
- 1 purple onion chopped
- 1 lb elk burger (or any ground meat substitute like beef or chicken)
- 4-5 mushrooms large, chopped
- 6-9 cloves fresh garlic minced(cut measurement in half if you aren't a garlic fan)
- 1/2-3/4 cup bbq sauce
- 1/2 tsp cumin
- 1 tbsp garlic salt (or garlic powder+salt)
- 1 tbsp dried dill
- 1 tbsp Dijon mustard
- salt+pepper to taste
- 1 cup mozzarella shredded(optional)
- green onions+parsley chopped, for topping meal
Instructions
- Pre-heat pan on medium to low heat, and melt coconut oil.
- Cook chopped sweet potatoes in coconut oil until slightly softened, then add ground meat of your choice.
- When meat is beginning to brown, add chopped purple onion, and cook until meat is all the way browned.
- Then add minced garlic and chopped mushrooms to your skillet meal, and continue to stir until sweet potatoes are softened and onions tender.
- Add bbq sauce and spices, and stir until evenly distributed throughout dish.
- Top with shredded mozzarella (leave it out If you’re dairy free or vegan), green onions, parsley, and *optional extra drizzle of bbq sauce on top!🌿
Notes
This meal is easily adaptable if you are searching for vegetarian, dairy free, or vegan recipes. Simply leave out the ingredient(s) to meet your dietary needs!:)
