Simple Sautéed Broccoli and Green Beans

Try this simple sautéed broccoli, and green bean recipe! A perfect side dish to add to any meal, and helps to increase your veggie intake! The natural flavor found from the garlic, onions, and parsley, take a rather boring vegetable, and make it just as delicious as the main course! Pair it with a few simple seasonings and you’ve got a perfectly flavorful side dish for your meal.

What you’ll need for Sautéed broccoli and green beans side dish:

~Cast Iron Pan, or skillet

~Broccoli and green beans

~Avocado or olive oil

~Garlic cloves

~White onion

~Herbs and spices: fresh parsley, cumin, ranch seasoning, salt, and pepper

How to sauté broccoli and green beans:

  1. Place broccoli florets and green beans in a pre-heated(medium-low temp) skillet, and drizzle with 1-2 tablespoons of avocado oil. Toss around to evenly coat vegetables in oil. Continue to toss broccoli and green beans in pan for about five minutes.
  2. As broccoli becomes tender, add about 1/3-1/2 of a cup of water. Let vegetables steam for about three minutes, or until water had evaporated.
  3. When water is almost gone, add garlic and chopped white onion. Stir for two minutes(*see recipe notes*).
  4. Then add parsley, cumin, ranch flavor, salt and pepper.

I serve this Sautéed broccoli and green beans side dish with any sort of grilled or roasted meat or fish. It makes an excellent addition to rice or potatoes too! I think this dish is perfect for a pot luck as well, because I don’t think there are ever enough veggies served at those kind of events!:) You can top sautéed broccoli and green beans with fresh grated parmesan, fresh parsley, and optional red pepper flakes.

Ingredients
  

  • 1 small head of broccoli chopped into florets
  • 1 lb fresh green beans
  • 1 white onion chopped
  • 4-6 cloves garlic minced
  • 1 tsp cumin ground
  • 1 tbsp ranch seasoning
  • 1/4 cup fresh parsley chopped
  • salt+pepper
  • 1/3-1/2 cup water

Instructions
 

  • Pre-heat pan on low-medium heat.
  • Add 1-2 tablespoons of oil (depending on how large your head of broccoli is).
  • Add broccoli florets and green beans. Toss in oil, so that vegetables are evenly coated.
  • Toss occasionally for about five minutes, while vegetables become tender.
  • As broccoli and green beans begin to soften, add 1/3-1/2 cup of water to your pan.
  • Toss broccoli and beans, and let the water steam the vegetables for about 3 minutes.
  • Once water is nearly evaporated, add minced garlic, and chopped white onion. (*see notes*)
  • When onions and garlic have begun to soften slightly, add fresh parsley, cumin, ranch seasoning, salt, and pepper.
  • Remove from heat, serve, and enjoy!

Notes

*I add my garlic and onions towards the end to avoid them cooking too long. I like to keep the crunchiness of the vegetables as much as possible, for two reasons. One, I don’t enjoy eating mushy vegetables, and two, it also preserves the nutrient content of the vegetables the less it has been cooked! 
If you prefer to have more fully cooked garlic and onions in your dish, feel free to add them in with your broccoli florets and beans at the beginning of cooking.
