Homemade Granola

This is one of my favorite homemade granola recipes. The crunchiness of the oats, and nuts, combined with maple and coconut flavors will have you saying goodbye to store-bought, processed sugar filled granolas! In our home we love to eat this granola as part of a breakfast parfait with greek yogurt, honey, and various fruits. Another great way we utilize this granola is as a snack on the go. After baking is complete, I will break it into larger chunks so that it is easier to take on a time crunch(no pun intended:)! Try this recipe and let me know what you think!

Homemade Granola Recipe

Crunchy granola recipe, great for breakfast or on the go snacks!

Ingredients
  

  • 4 cups Whole Oats rolled
  • 1 cup Shredded coconut sweetened or unsweetened
  • 1/8-1/4 cup Chia seeds
  • 1 cup Almonds chopped or slivered
  • 1 cup Pecans roughly chopped
  • 1/3 cup Coconut oil
  • 1/3 cup All natural peanut butter
  • 2-3 tbsp Honey
  • 1/4 cup Maple syrup
  • 2 tsp Maple extract vanilla, coconut, or almond will also work
  • 1 tbsp Cinnamon
  • 1/4 tsp Nutmeg
  • 2 tbsp Coconut palm sugar coconut sugar

Instructions
 

  • Pre-heat oven to 300ºF. Prepare two baking sheets by lining them with parchment paper and set aside.
  • Combine oats, coconut, chia seeds, almonds, and pecans in a large bowl.
  • In a microwave safe bowl or large liquid measuring cup combine the remaining ingredients. Microwave in increments of 30 seconds, stirring in between until contents are smooth and melted together
  • Once completely melted, pour liquid over dry ingredients and stir until dry ingredients are evenly coated with maple mixture.
  • Spread granola thinly and evenly between the two prepared baking sheets. (view video for an example)
  • Place baking sheet on top rack of oven. Bake for 20 minutes, then remove granola and rotate 180º and bake for 10 more minutes. (see recipe notes section below)
  • Once granola has finished baking, remove from oven and let cool completely. When granola is cooled, break into desired chunk size and store in airtight container at room temperature for up to one week.

Notes

I bake my two sheet pans of granola, separately. This is so that I can ensure even baking at the same temperature(my sheet pans do not fit on the top wrack together). This does bring the total baking time from 30 minutes, to 60 minutes. Therefore increasing total time from 45 minutes to 75 minutes. If you are on a time crunch and need to bake both at the same time, I would suggest rotating pans from bottom to top racks halfway through to increase even baking outcome.
