Cocoa Nutty Energy Bites

A Gluten and Dairy Free Snack filled with peanut butter, chocolate, and coconut flavors. The perfect on the go snack!

Ingredients
  

  • 1 cup Oatmeal whole oats, rolled, or quick
  • 1/2 cup Shredded coconut
  • 1 1/2 tbsp Chia seeds flax seeds work too
  • 1/4 cup Cocoa powder
  • 1/2 cup All natural peanut butter
  • 1/4 cup Maple Syrup or Honey or half of each
  • 1 tsp Coconut Extract or sub with vanilla extract
  • 1/3 cup Crushed Pecans
  • 2 tbsp Mini Semi Sweet Chocolate Chips *optional*

Method
 

  1. Combine all ingredients in a food processor or a mixing bowl. Mix together (in food processor or by hand) until all ingredients are thoroughly combined.
  2. *If there are still dry areas in energy bite batter try adding a little bit more maple syrup, honey, or peanut butter.
  3. Refrigerate for at least 20 minutes.
  4. Remove from refrigerator and roll into one inch balls in diameter.
  5. Enjoy!
